[제 2 주제] 전통음청류의 과학적 고찰

본 소고에서는 최근에 보고된 한국 전통음청류의 과학적 연구 결과들을 정리하고 평가하였다. 그 결과는 다음과 같이 요약될 수 있다. 한국 전통음청류는 가공방법이나 품질특성에 따라서 12개 분야로 나누는데 이를 다시 현재의 이용도 측면에서 재조명하면 3개 분야로 대별할 수 있다. 즉 차류 분야, 식혜류 분야 및 즙류 분야로 나눌 수 있으며 이는 각각 용출형 음료, 숙성형 음료 그리고 착즙형 음료 형태로 특징지울 수 있다. 차류분야에서는 녹차를 중심으로한 순다류의 항암효과와 항돌연변이의 효과가 인정되고 있으며, 향약재, 곡물 및 과실을 중심으로한 유사다류의 가공 조건 확립을 통하여 새로운 산업적 제조기술이 계속 개발되고 있다. 이러한 기술에는 제반 볶음조건을 통한 향미개선, 입자의 분산성 증진 그리고 경제적인 공정설정 등을 포함하고 있다. 특히 대표적인 당화음료인 식혜의 경우는 산업화의 획기적인 성공 사례로 기록되고 있는 것이다. 한편 즙류에 대한 연구는 미미한 편이나 향후 전통음료의 다양화 측면에서 성장 가능성이 높은 분야로 지적된다. 끝으로 전통음료의 가공변형에는 충분한 과학적 배경이 반드시 전제되어야 할 것이다.

The scientific research results on the Korean traditional non-alcoholic beverages published in the literatures recently were reviewed and evaluated. The results can be summarized as follows. Korean traditional beverages were classified into 12 groups according to their processing methods and quality characteristics. Nowadays. however, it can be largely divided into 3 groups by its meaning in the modern setting: tea group by extracting, Shikhe group by aging, and Jeub group by squeezing. The total number of Korean traditional nonalcoholic beverages reaches approximately 200. It is distinguished by the development of tea and tea analog such as cereal and fruit based beverages, Sungnyung (rice tea), roasted cereal powder, Shikhe (malt saccharified rice beverages), and fruits drink. There is also a strong distinction among Korean beverages. Therefore processing methods are varied according to different beverages items. The Korean traditional beverages such as green tea is also nutritionally and physiologically sound. The taste and flavor of different beverages is greatly influenced by physico-chemical properties of raw materials. and processing conditions. More researches are needed on the quality requirements of the Korean traditional beverages and the industrialization of the processing methods.
