Antioxidative Nutrients and Nitrite Scavenging Ability of Various Vegetable Seed Sprouts

Seven seed sprouts were selected to be examined their antioxidative nutrient contents and nitrite scavenging ability properties; alfalfa, broccoli, Korean leek, radish, red cabbage, red radish, dachae. Total vitamin C was highest in dachae as 166.22 mg/100g, and lowest in Korean leek as 91.9 mg/100g. Total content of phenolic compounds was highest in red radish as 912.74 mg/L and lowest in Korean leek as 230.19 mg/L. Regarding nitrite scavenging activity of aqueous fraction, broccoli appeared strongest as 92.35% at pH 1.2. Regarding nitrite scavenging activity of methanol extracts, radish was appeared strongest as 95.49% at pH 1.2.
