A Study on restoration of Lump tea and tea propriety

A result of study for restoration of tea propriety including making lump tea in Koryeo, reducing to lump tea powder, brewing of powdered tea, making an offering the tea, drinking the tea, are as follows. Method to make lump tea is described in Beiyuan Bielu written by Chao Ju Li of Southern Song. But there were no detailed explanations and remains, and so there are two kinds of one which can't be restored. Firstly, lump tea is made by pressing tool after tea dough is inserted to a mould. Then the pressing tool with putting tea dough between the top and bottom is called in the mould. A dragon or a phoenix pattern intaglio is on the top of the mould and a pattern of checkers intaglio is at the bottom of it. The horizontal frame is called in ch&#7803;an. This mould couldn't be made, so circular and flat tea was made by pressing an iron pipe in the past 1992 for the restoration test of lump tea held in Japan. A casting board for a kind of coloured cake made of pine flowers, honey, etc. can be used in Korea instead of this mould. Secondly, in order to dry lump tea after pressing the mould, it must be dry for 10 ~15 days in Yen Pei burning with brushwood. Even in Japan they didn't know the structure of Yen Pei and couldn't make it, therefore, they substituted a fixed temperature desiccator for Yen Pei. Substitution of the fixed temperature desiccator could be also inevitable in Korea. Powdering of lump tea can make powdered tea making use of Wooden Crushing Stand and Wooden mallet, an iron Grinding Boat, a sieve, Hemp-Palm Broom, etc., described in Praise on Diagram of Tea Equipage which was written by Shen An Lao Jen. The Brewing of powdered tea can be brewed by <brew tea> of Daguan Discuss on Tea written by The Emperor Hui Tsung(徽宗皇帝, 1101-1124) making use of Tea bowl with hare's-fur striation on a black ground which is a substitution of a silver brazier, an iron kettle for boil water, Black tea-cups plated with gold powder described in Korean Pictured and Tea bamboo whisk, etc., described in Praise on Diagram of Tea Equipage. Offering the tea is doing as follows. Putting Tea bowl with hare's-fur striation on a black ground with brewed tea on the sunken of lacquer cup holder made of wood and place it on tea tray after covering with silver lotus leaf-shaped. Offering and drinking the tea customs follows the records of the Korean Pictures.
