Differences of flavor among various teas are caused mainly by differences the manufacturing process. Characteristic flavor of green tea (non fermented), oolong tea and pouchong tea (semi-fermented)and black tea (fermented) is related to their manufacturing processes. And also flavor differences of tea caused by cultural and preservation conditions. Investigation method of tea flavor was carried out by instrumental analysis of GC and GC-MS and sensory evaluation of the teas.
