西北漢簡所見邊地戍所的肉食消費

On the Meat Consumption of Guardsmen in Frontier Fortress in Northwest Wooden Slips of the Han Dynasty

西北지방에서 발견된 漢簡중에서 발견된 肉類消費에 관한 文字유물을 고찰한 결과 우리들은 漢代서북변경지역에 주둔하였던 吏卒의 음식소비의 한 방면에 대해 새로운 지식을 얻을 수 있었다. 관련기록의 분석을 통하여 우리는 서북지역에서 발견된 漢簡중에 邊塞에 주둔한 吏卒이 소비한 肉類의 종류를 알 수 있었다. 주로 소고기, 양고기, 닭고기 및 어류 등이었다. 말고기와 개고기가 식용으로 사용되었다는 기록은 매우 한정되어 있다. 이것은 말과 개가 邊塞戍所에서 매우 중요한 존재로서 일반적으로 식용으로 도살되지 않았다는 것을 의미하는 것이다. 食用말고기의 來源은 일반적으로 병으로 죽었거나 기타 비정상적으로 사망한 말이었다. 漢簡중에는 돼지고기에 대한 소비 기록은 보이지 않는다. 이에 대해서 아직 증명할 자료가 없지만 戍所에서 돼지고기를 식용으로 했을 가능성을 배제할 수는 없다. 邊塞에서 식용으로 사용된 육류의 來源은 사육, 수렵과 구매 등 크게 세 가지 경로가 있었다. 사육과 수렵에 관한 기록은 제한되어 있었고 구매에 관한 기록이 매우 보편적이기 때문에 구매가 식용 고기의 주요한 내원임을 알 수 있다. 그러나 대부분의 고기는 吏卒개인이 구매한 것이 아니라 주로 戍所에서 구매한 것이었다. 戍所에서 구매한 고기는 주로 招待에 사용한 것 외에 명절 제사에 사용되었다. 戍所에서는 春秋社稷과 臘등과 같은 명절제사를 지냈다. 제사를 지낸 육류는 吏卒들에게 분배되었는데, 이것이 吏卒들이 소비할 수 있는 가장 주요한 육류 소비 來源이었다. 그러나 매번마다 나누어주는 양은 매우 제한적이었다. 戍所의 吏卒들이 고기를 소비할 수 있는 기회와 양이 매우 적었기 때문에 육식 소비가 吏卒들의 일상 음식소비 중에서 점하는 비중은 높았다고 보기 어렵다.

By studying the text remains of meat consumption in the northwest slips of the Han dynasty, we can gain some new understanding of guardsmen’s daily diets. It can be seen that the kinds of meat consumption of guardsmen in frontier fortress were beef, lamb, chicken and fish, etc by analyzing the relevant record in northwest slips of the Han dynasty. There were a few records of horse and dog meat consumption because they played an important role in the garrison and generally would not be slaughtered for human consumption. We don’t know whether the guardsmen ate pork, while the possibility still exists. The meat in frontier fortress had three sources like cultivation, hunting and purchase. Purchase was the main source of meat, while the meat was mainly purchased by the garrison not by the guardsmen. Festival worship in the frontier fortress was the main source of meat. For the opportunity to eat meat and the quantity of meat were limited, we shouldn’t overestimate the meat consumption of guardsmen accounted for the proportion of their daily diets.
