A Study on the Job Satisfaction and Turnover of Kitchen Employees in the Hotel Industry and Those in the Food Service Industry

This thesis attempted to propose a question on the job satisfaction of kitchen employees in the Hotel Industry and those in the Foodservice Industry. And how it affects the changes of their occupations. As a study method, it was attempted to find out the true nature of job satisfactions and changes; then, based on the essence, their concepts were observed, and the consisting factors were observed while looking into the previous trend of study as a study trend. In addition, through case analysis, by choosing 7 prestigious hotels ranked in the 1st class and 5 foodservice industry which have many stores, the relation between job satisfaction and job turnover was found out, and though the interviews with kitchen employees for more than 2 months, their opinions and reliabilities were collected and analyzed. The surveyed questionnaires were analyzed and studied through SPSSWIN, Frequency, Crosstabs(Chi-Square test), t-test, ANOVA, reliability analysis, Factor analysis, Correlations, and Regressions were conducted to figure out the population statistical difference. According to the study results, those employees who thought Pride and fair compensation, kitchen environment, internal and external working conditions, and the welfare for the employees are the most important factors in case of changing jobs. Consequently, the results of job satisfaction showed their interests in promotion based on the performance evaluation, internal and external working condition, and welfare programs for the employees, educational training, and relations with co-workers. For this reason, in order to reduce the rate of turnover and increase job satisfaction, the industry efforts for and interests in appropriate compensation, improvement of working environment, continuous educational training, fair human resource management, and maintenance of good relation with co-workers are necessary.
