The purpose of this paper is to analyze the structural trends and properties of Korean fats and oils Industry using the Input-Output Table during the 30 years from 1980 until 2010. As a results, the ratio of total output and value-added of the oils and fats industry to the whole economy has been decreasing after 2008, which was due to the raw materials and intennediate goods prices rise but the wages, interest, and profit did not increase during the financial crisis. Also, investment was sluggish enough to not be able to preserve the capital consumption allowance during the same period It is fortune to be increased the export and the proportion of cosmetics in fats and oils industry due to the improved quality and 'Korean Wave"
