In 'the song of tea', BumhaiGakan emphasized the efficiency of good tea by expressing that 'Drinking tea keeps me away from ten thousands illnesses and thousands of anxieties, and lets my soul ramble freely as Budda. Cho-eui also reminds us of the necessity and importance of knowing the appropriate way of tea keeping in the 15th chapter of his book called Dong da song. On the other hand, they can be damaged easily due tovery small contamination. Therefore, keeping tea in an accurate and appropriate manneris a very important and indispensable process for producing tea. If the result of producing tea indicates the people's efforts for good and beneficial quality tea, keeping tea is more important for maintaining or developing the true natures of tea: true color, true flavor, true taste and good spirit, without changing and decaying according to the different kinds and types depending on the age. The aimof this study was to studyand prove bibliographically the scientific and reasonablemethods, and the materials were applied tokeep tea in the tea books of hree oriental nations, KoreaㆍChinaandㆍJapan, from approximately 8°C to 19°C, which wereapplied favorably to the present age known as 'the scientific age'. This study is expected tohelp remind people, who love and treat tea as a necessity, of theimportance of keeping tea.
