A Study of Definition and Structure on Cutlery: Focus on Public Item

This study gave a fresh interpretation of the emergence of cutlery at the Western table and traced the changes of cutlery over time so as to rediscover the relationship between foods and tools of eating which existed beyond a particular time and space. The objectives of this study are as follows: First, this study is to define and classify of cutlery base on the theoretical background. Second, this study is to understand the cutlery in dining space and draw out a way of public item which is associated with eating. Historically, extension of eating such as knife, fork and spoon has been accomplished to improve the nutritional and symbolic value of foods, and at the same time, the emergence of new tools of eating entails changes in the way of life.
