본 연구에서는 초등학생을 대상으로 식품첨가물 중 인공감미료에 대한 인식 및 정보 수요도를 파악하여 인공감미료에 대한 올바른 정보를 전달할 수 있는 정보 전달 매체를 개발하고자 하였다. 인공감미료에 대한 인식을 알아보기 위해 2008년 4월부터 11월까지 연구를 진행하였다. 수도권 소재 초등학교 5, 6학년 남녀학생 1,200여명을 대상으로 설문조사를 실시하였고, 설문 결과를 바탕으로 전문가 집단을 구성하여 위해 정보 전달 매체인 ‘살이 안찌는 설탕 - 인공감미료 대탐험‘을 개발하였다. 그 내용으로는 첫째, 인공감미료에 대한 기초 정보 전달을 위해 인공감미료의 역사, 정의, 천연인공감미료와 인공감미료, 인공감미료의 종류, 엄격한 안전성 실험, 인공감미료의 사용을 담았고, 둘째, 초등학교 고학년 학생의 눈높이와 관심을 고려하여 인공감미료 관련 과학실험, 퀴즈퍼즐, 만화를 담았다. 뒷부분에는 실생활과 관련지어 생각해 볼 수 있도록 옛날 옛적 우리 부엌에서 단맛내기, 우리가족, 인공감미료 안전하게 먹고 있나?, 식품첨가물 데이터베이스 이용하기를 담았다. 개발된 매체를 시범 적용 평가한 결과 초등학교 고학년 학생들에게 인공감미료에 대한 올바른 지식전달의 목적을 충실히 하였으며 식품에 대한 안전성에 대한 의식을 높이고 인공감미료에 대한 바른 태도를 향상시키는데 기여하였다는 사실을 확인할 수 있었다. 본 교재는 초등학교 고학년 학생들의 식품첨가물과 인공감미료에 대한 올바른 인식을 가질 수 있는 식생활 교육에 식품 정보 전달 매체로 널리활용될 수 있을 것이다.
The purpose of this study was to develop risk communication materials on artificial sweeteners for elementary students. A survey was conducted to diagnose the current perception and information needs of elementary students on food additives including artificial sweeteners from 1200 students in Seoul and metropolitan area. Based on the results, the contents on artificial sweeteners were developed by brainstorming and consultation by experts. The material developed was titled as Great adventure to artificial sweeteners ‘and contained the history, definition, safety experiments, usage of artificial sweeteners, comics, puzzles, science experiment, etc. on artificial sweeteners. When the material developed was evaluated by 90 elementary students, positive effects of risk communication including understanding on artificial sweeteners were observed. Therefore, the material developed could be used to facilitate the risk communication on artificial sweeteners and elementary dietary education, and further contents should be developed on other food additives.
