The study aims to analyze food and service preferences of the growing ethnic-food restaurants by Korean customers, in order to provide relevant information to the restaurants on marketing and positioning strategies. In addition, the study is to contribute to better understanding of ethnic food restaurants on the part of the Korean restaurant industry by defining ethnic food industry and restaurants. The niche market that ethnic foods represent may be an important part of the future value-added marketing strategies.
