Ex ante Estimations of Demands for Animal-Friendly Meat Products

This paper estimates ex ante demands for animal-friendly meat products. Since price and quantity data of animal-friendly meat products do not exist, this paper develops a methodology that enables us to estimate demands for these products based on consumer survey. The price and quantity of consumption for animal-friendly pork, beef and chicken are generated using consumer survey results as well as the observed market data of price and quantity for general pork, beef and chicken. Estimation results indicate that all the coefficients on own price are very significant at 99 percent level. The coefficients on the price of general meat are also very significant at 99% level. The estimation results indicate that the influence of the price for general meat which is a substitute for the animal-friendly meat is largest.
