The mutagenic activities of 7 sorts of salted fishes including anchovies, small shrimps, small clams, clams, spawn, oyster, and small octopus were tested on Salmonalla typhimurium strains TA 100 and TA98 by the method of Ames et al. Each kind of salted fishes was divided into three groups; control trypsin treated, and trypsin and vitamine C treated. All of the samples were extracted with methanol and with methanol and chloroform mixture. The test compounds were preincubated with 0.5㎖, of the S 9 mixture (9000 × g fraction of rat liver homogenate) and 0.1㎖ of bacterial culture (1×10 cells) at 37℃ for 20 min. Then 2㎖ of soft agar were added, and the mixture was poured over 25㎖ of minial glucose-agar containing 0.1 micromol of 1-histidine in a petri dish. In test without metabolic activation, 0.5㎖ of 0.1M sodium phosphate buffer (pH 7.4) was used instead of the S 9 mix. Plates were incubated at 37℃ for 2 days, and then revertant colonies were counted. Anchovies showed negative. Some samples of methanol extraction showed very weak positive, however, these positive results were not proportional to the doses of extractions. Conclusively, small salted fishes commomly seen in the market in Korea were showed to have no significant mutagenecities on Salmonella typhimurium TA 100 and TA 98.
