The Russian Far East is characterized by significant and unexploited reserves of wild plants, in particular, the Manchurian walnut. Literary and experimental data about the composition and properties of the walnut characterize it as a valuable and prospective raw material for food, feed, chemical, pharmaceutical, textile industries and others. We developed a series of innovation products and food technologies using the Manchurian walnut and tried them in an industrial environment. Implementation of these developments will involve the efficient use and turnover of traditional food raw materials, expand the assortment of natural foodstuff and provide the local population with products that have high nutritional and biological value and balanced chemical composition that are able to satisfy the body’s need for essential nutrients. In addition, it will help improve the overall immunity of the population and prevent the development of alimentary-dependent diseases from a shortage of food substances and adverse environmental conditions.
