To search for powerful natural antibrowning agents, conalbumin was purified from egg white and tested its antibrowning efficacy on catechol-PPO model system. The relative antibrowning effectiveness was also compared to the common known inhibitors (cysteine, glutathione, oxalic acid, and citric acid). The Vmax value of control was 0.65 AU/min. The inhibitory pattern on catechol-PPO model system appeared to be non - competitive, with a Km value of 1.5 mM and a Ki value of 5.5 mM. The inhibitory mechanism of conalbumin seems to bind metal ion in the active cite of enzyme. The Iso values of inhibitors were found to be 0.8 mM for cysteine, 1.3 mM for glutathione, 2.0 mM for conalbumin, 13.5 mM for oxalic acid, and 105 mM for citric acid. Among these tested, cysteine, glutathione and conalbumin are the most potent inhibitors on catechol-PPO reaction.
