Bacillus sp. JH-1 strain isolated from soybean paste produced an alkaline protease. This strain grew well in neutral media, and did not grow in alkaline media. It was identified as Bacillus sp. based on its morphological, physiological and biochemical characteristics. The strain JH-1 was a Gram positive, endospore forming, rod-typed bacterium. The extracellular protease was active within a pH range of 6.0~10.0, and at 10~60°C, and it was optimal at pH 9, and 40°C. The protease was activated by Triton X-100, and β-mercaptoethanol.
