Extractive nitrogenous constituents of ark shell(Scapharca subcrenata) in body fluids

In order to investigate the composition of extractive nitrogenous components in the body fluids of ark shell(Scapharca subcrenata) harvested bimonthly from December 1994 to December 1995 in the southern coast of Korea, the contents of extractive nitrogen, free amino acids, oligopeptides, ATP and its related compounds, quaternary ammonium bases, and guanidino compounds were measured. The extractive nitrogen contents of body fluids were 40~69㎎/100g(average 54㎎). Eighteen or thirty-one kinds of free amino acids were found in the extracts of body fluids, and their total amount of free amino acids were 102~182㎎/100g(average 136.4㎎). Taurine, β-alanine, alanine, glutamic acid, hypotaurine, glycine, histidine were the major free amino acids in the body fluid extracts. Ten or nineteen kinds of amino acids from oligopeptides increased after hydrolysis, and the total amount of them were 17~49㎎/100g(average 36.3㎎). The content of ATP and its related compounds was average 38.5μmol/100g, ADP, AMP, hypoxanthine were major compounds among them. As for the betaines, homarine, glycinebetaine, trigonelline were detected in the extracts and their levels were average 70.1㎎, 3.9㎎, and 1.4㎎/100g, respectively. The contents of TMAO and TMA were average 53.7㎎ and 11.0㎎, respectively. The total nitrogens of the compounds analyzed for each samples accounted for more than 90% of the extractive nitrogen in this study.
