To define the effects of various levels of dietary enzymatic hydrolysates using squid by-product for fish meal protein on growth and body chemical compositions of korean rockfish were bred for eight weeks with the four experimental diets of different squid hydrolysates. Effects on the weight gain and feed efficiency in korean rockfish, enzymatic hydrolysates using squid by-products addition group were very effective. In korean rockfish, weight gain ratios of enzymatic hydrolysates addition group were increased at 464.9~490.0%, compared with 385.2% at control group after eight weeks growth trial. Crude protein and lipid contents were increased, whereas moisture and crude ash contents were decreased in the chemical compositions of dorsal muscle after eight weeks growth trial. The total amino acids of squid enzymatic hydrolysates addition group were 3,615.4~3,714.4㎎%, compared with 3,379.7㎎% at control group after eight weeks growth trial. Amino acids such as glutamic acid, aspartic acid and lysine were rich in all the diet groups. Percentage of saturated acids(14:0), monoenoic acids(14:1), polyenoic acids(18:2n-6, 20:2n-6) were increased, but saturated acids(24:0), polyenoic acids(20:3n-3, 22:4n-6, 22:5n-3) were decreased after eight weeks growth trial.
