Optimum extractive conditions and utilization of dimethyl-β-propiothetin (DMPT) as fish growth stimulator using cabbage by-product were investigated. The extractive content of dimethyl-β-propiothetin(DMPT) in cabbage was 310,700ng/g during autoclaving at 121℃ for 45 minutes. A rate of growth in the red sea bream, experimental fish fed the diet added curde DMPT shows a high rate of growth than the control. Feed efficiency shows highest as 80.01% at the diet added 100㎖/kg(curde DMPT/total diet) than the control(65.76%) and a rate of growth was highest at the diet added 150㎖/kg(curde DMPT/total diet). In the Takifugu obscurus, also, a rate of growth was high(217.5%) at the diet added 100㎖/kg(curde DMPT/total diet) than content(199.1%) of control. The muscle composition of experimental fish fed crude DMPT from cabbage as follows : to increasing of crude protein but to be decreasing of moisture, crude liquid and crude ash. Components of amino acid after 12 weeks of feeding trial ; glutamic acid, aspartic acid, alanine, lysine, glycine, leucine and serine were high but cystine, histidine and tyrosine were low. 18:1n-(7+9), 18:2n-6, 22:6n-3, 20:4n-6 and 16:1n-7 of fatty acid were commonly the major fatty acid in in muscle composition of experimental fish fed crude DMPT from cabbage.
