Stability evaluation of natural color from Ascidian shell Extract

In this study, Ascidian shell was extracted with 100% EtOH as solvent and diluted with DMSO afterwards to evaluate its color stability. Light absorbance according to pH and numerical data measured with color-difference meter were studied. As a result, absorbance at pH7 and ±a were the most stable. When exposed to sunlight, absorbance was decreased to more than 70% and ±a was decreased to 87%. As we evaluated the stability regarding temperature, a major decrease in absorbance and ±a could be observed at 45℃. Decrease rates dropped in descending order at 25℃, and 4℃, revealing that there is a tendency to destabilize as temperature increases. By adding antioxidants and EDTA-3Na, stability tended to increase. α-tocopherol and Glutathione were the most effective antioxidants.
