The purpose of this study was to analyze the possibility of coffee residue. In this study, the cytotoxicity of coffee residue extracts were observed in B16F10 murine melanoma cells and RAW 264.7 macrophage cells by water soluble tetrazolium salt-1 (WST-1) assay. These extracts were measured by methods such as DPPH radical scavenging and antimicrobial activities in Staphylococcus aureus, Staphylococcus epidermidis, Exdherichia coli. As a result, cell viability for the samples of B16F10 and RAW 264.7 cells were increased 75% at 2.00 μl/ml concentration of samples except for CRE in RAW 264.7 cell. The DPPH radical scavenging activity CRO and CRE were showed each 17.58, 86.61% on concentration at 10.0 μl/ml. Both CRO and CRE have showed antimicrobial activity on Straphylococcus epidermidis, Straphylococcus aureus, Escherichia coli each by 11.3±0.4, 12.0±0.7, 12.0±0.0 mm and 13.7±0.9, 14.0±1.3, 12.7±0.9 mm at 150 μl/ml. Also, we evaluated the test of pH, viscosity, particle observation for emulsion stability applied with CRO. Consequently, emulsion containing CRO was very stable at accelerated temperature conditions for 21 days under the pH, viscosity and particle stability. The conclusion is suggested that CRs could be applicable to cosmetics material.
