Control of Food Poisoning Bacteria in Pork by Combined Treatment of Cell-free Culture Supernatant Obtained from Lactobacillus acidophilus D59 and Chemical Preservatives

The aim of this study was to measure the antibacterial effect of the mixture of cell-free culture supernatant (CFCS) obtained from Lactobacillus acidophilus D59 and potassium sorbate against Salmonella enteritidis ATCC 13076, Staphylococcus aureus ATCC 6538, and Listeria monocytogenes KCTC 3569 present in pork. After being incubated in Lactobacilli MRS broth at 37℃ for 24 hr, the amount of lactic acid contained in the CFCS of D59 strain was 152.4±4.8 mM. The bacterial counts of L. monocytogenes and S. aureus were decreased by 1.8 and 0.9 log cycle, respectively, after treated with CFCS (5%) of D59 strain and potassium sorbate (100 μg/ml) in pork artificially inoculated food poisoning bacteria. However, the viable cell counts of S. enteritidis reduced by these antibacterial substances were significantly lower than those of Gram-positive bacteria.
