水稻의 蛋白質含量에 關한 硏究

水稻에 있어서 蛋白質分析에 對한 基礎的인 知識을 提供코저 同一穗內의 開花順序別, 同一株內의 各分蘖別 및 胚와 胚乳에 對한 蛋白質含量을 調査하였다. Japonica type은 Indica type에 比해 蛋白質含量이 낮고, 同一穗內의 開花順序別, 同一株內의 分蘖別蛋白質含量은 各各 다르고 胚의 蛋白質含量은 胚乳에 比해 約2倍 程度높다. 在來 및 奬勵品種의 稈長과 蛋白質含量間에는 相關이 있다.

In order to obtain fundamental information on study of rice protein, protein content in different parts of a panicle, different panicles of a plant and difference between embryo and endosperm protein were examined. Protein content of Japonica type was lower than that of Indica rice. It was found that the content of protein were different among the grains with varying flowering dates in a panicle and among the grains on different tillers of the same plant. Embryo contained approximatly two time more protein in comparison of endosperm. Clear relationship was observed between protein content and culm length in local and leading varieties.
