Stevia which is a sweetness crop originated from Paraguay has the sweeting power as over the three hundred times that of sugar. Stevia is mainly composed of Stevioside and Monoglucosyl-stevioside. Monoglucosyl-stevioside has more sweetness by 30% than Stevioside which is contained about 6% in dried leaves. Same promising lines which are improving in Japan have morel than 25% Stevioside and Monoglucosyl-stevioside. Some researchers reported that the sweetness of Stevia was harmless to men in acute toxidity and semiacute toxidity. Stevia has a very like taste to sugar among the natural sweetness resource. Therefore, it is sugested that. Stevia is a very suitable crop as a substitute for sugar.
