Lipoxygenase-3 deficient lines were screened from 723 soybean collections using a carotene bleaching test and an improved SDS-polyacrylamide gelelectrophoresis. Their botanical and biochemical characterization and utilization for soybean sprouts were conducted. The results obtained are summarized as follows ; In the selection of L-3 deficient lines, carotene bleaching test was effective for selection of putative lipoxygenase-3 lacking lines from soybean collections. Two soybean lines(67, 217) lacking lipoxygenase-3 isozyme were identified by the SDS-polyacrylamide gel electrophoresis. No significant physiological problem was observed in the life of the mutants that showed small seed, yellow seed coat, white flower, early maturity, determinate growth, and low seed protein. Proportion of linoleic and lonolenic acid methionine content was high in mutants seeds compared with those of control. In the utilization, the mutant soybeans were appropriate for sporouting beans in aspect of germinating rate, yield, root hair number, etc. The removal of beany flavor by moist heat treatment were more rapid in the mutant soybean sprouts than in normal products. When beany flavor of the soybean sprouts were removed completly by heat treatment, vitamin C content of the mutant soybean sprouts was 30% higher than that of the control.
