Pearl millet is a new food, feed and green fodder crop in Korea, and a staple human food in Africa and Asia. The writer was invited to participate in the International Pearl Millet Field Day of ICRISAT in India from August 30 to September 11, 1991, and selected promising dwarf, early maturing and high-yielding male sterile lines, restorer lines and superior white grain hybrids to introduce them to Korea, and also had an opportunity to eat pearl millet foods. Thus the objective of the paper was to introduce Koreans the traditional pearl millet foods in Africa and Asia and their cooking methods along with food quality. The major traditional foods being made from pearl millet grain were unfermented and fermented breads, thick and thin porridges, steam-cooked products, nonalcoholic and alcoholic beverages, and snacks in Africa and Asia.
