A Hygienic Study on the Raw Milk in Korea

n this study the author observed the status of milk hygiene on raw milk in Korea, during five years from 1975 to 1979. The results were as follows: 1) The average rate in amount of milk fat was 3.50±0.03% during five years. 2) In the seasonal changes of milk fat the rate (%) was the order of winter, autumn, spring and summer respectively, during 1975-1979. 3) The mean value of rancidity rate (%) in raw milk was 0.52±0.11% during five years, and its seasonal changes was statistically confirmed. 4) The positive rate in percentage of the total raw milk samples (517,358 farm) by 2, 3, 5, Triphenyl Tetrazolium Chloride (TTC) Reduction Test has shown 0.058%.
