This study was conducted to find out microbial contamination during the procedure at chicken meat processing plant in Taegu area using microbiological analysis of standard plate count, coliform and Salmonella spp. Scalding water, 177 chicken carcass and 133 feces were collected in plant. The contamination levels by standard plate count were 1.0×10⁵ CFU/ml and coliform were 2.4×10⁴ CFU/ml for scalding water. The contamination levels by standard plate count were 2.9×10⁵ CFU/g and coliform were 6.6×10⁴ CFU/g for chicken carcass. Twenty five strains of Salmonella were identified from 4(2.3%) of chicken carcass and 17(12.8%) of feces. Among Salmonella isolated S. kentucky were most frequent serotype(9 strains), of them 4 strains were S. typhimurium var. cophenhagen, 3 each were S. derby and S. enteritidis, 2 each were S. infantis and S. muenchen and 1 each were S. montevideo and S. pullorum. Antimicrobial drugs susceptibility test of Salmonella isolated were performed by agar dilution method, using 12 antibiotics as follows : furazolidone(FU), trimethoprim(TM), cephalothine(CE), sulfadimethoxine(SU), gentamicin(GM), ampicillin(AP), enrofloxacin(EN), streptomycin(SM), tetracyclin(TC), polymixin B(PB), kanamycin(KM) and chloramphenicol(CP). Most of strains were highly susceptible to GM, EN, moderately susceptible to AP, FU of TM. Whereas highly resistant to SM, SU or CE, moderately resistant to CP, KM, TC of PB. The most commcon pattern was resistant to CE, SU, SM, TC, and PB, and followed resistant to KM, CE, SU, SM, TC and PB. Resistance transfer rate of isolates to resistant to FU were 100%, SU were 96%, CE were 95.2%, PB were 76%, KM were 70%, TM of SM were 50% each and TC were 41.2%.
