고품질 원유의 생산, 이용을 위한 원유 위생

A study on the quality of raw milk hygiene for prodution and use of high-quality raw milk

본 연구는 경기도, 강원도, 충청도 지역의 목장들 가운데, 고품질 원유를 납유하는 고품질 목장과 여러 등급의 원유가 혼입되어 납유되는 일반 목장으로 구분하고, 탱크로리도 고품질 원유만을 별도로 집유하는 탱크로리와 여러 원유가 혼입되어 집유하는 탱크로리로 구분하여, 목장간 유질의 차이점과 별도 집유와 혼합 집유시 유질의 변화를 알아보고, 향후 개선 방안을 모색할 목적으로 실시하였는데, 그 결과는 다음과 같다. 1. 일반 목장의 세균수는 전체 평균이 1996년에 1.3×10⁵/ml이었고 1997년에는 0.8×10⁵/ml이었으며, 전체 1등급의 비율은 1996년에 65.7%이었고 1997년에 77.7%였다. 고품질 목장의 세균수는 전체 평균이 1996년에 1.8×10⁴/ml이었고 1997년에는 2.1×10⁴/ml이었으며, 전체 1등급의 비율은 1996년에 98.9%이었고 1997년에는 98.8%였다 2. 일반 목장에서 집유된 탱크로리의 세균수는 전체 평균이 1996년에 3.4×10⁵/ml이었고 1997년에는 2.4×10⁵/ml이었으며, 전체 1등급의 비율은 1996년에 21.9%이었고 1997년에는 35.9%였다. 고품질 목장에서 집유된 탱크로리의 세균수는 전체 평균이 1996년에 4.7×10⁴/ml이었고 1997년에는 5.2×10⁴/ml이었으며, 전체 1등급의 비율은 1996년에 91.5%이었고 1997년에는 89.0%였다. 별도 집유된 원유보다 여러 등급의 원유가 혼입되어 집유시 세균수의 유질저하가 심하게 나타났다. 3. 일반 목장의 체세포수는 전체 평균이 1996년에 511,000/ml이었고 1997년에는 476,000/ml이었으며, 전체 1등급의 비율은 1996년에 18.8%이었고 1997년에 21.1%였다. 고품질 목장의 체세포수는 전체 평균이 1996년에 207,000/ml이었고 1997년에는 178,000/ml이었으며, 전체 1등급의 비율은 1996년에 58.6%이었고 1997년에는 67.5%였다. 4. 일반 목장에서 집유된 탱크로리의 체세포수는 전체 평균이 1996년에 568,000/ml이었고 1997년에는 469,000/ml이었으며, 전체 1등급의 비율은 1996년에 1.4%이었고 1997년에는 1.9%였다. 고품질 목장에서 집유된 탱크로리의 체세포수는 전체 평균이 1996년에 212,000/ml이었고 1997년에는 178,000/ml이었으며, 전체 1등급의 비율은 1996년에 44.9%이었고 1997년에는 71.8%였다. 고품질 목장의 체세포수와 탱크로리의 체세포수의 전체 평균은 변화가 거의 없었고, 1등급의 비율이 1996년에 비해 1997년에 26.9%의 향상을 보였다.

From January of 1996 to December of 1997, raw milk samples from dairy farms located in the provinces of Kyonggi, Kangwon, and Choongchung were collected to evaluate microbiological and hygienic quality. Each dairy farm was grouped into either generic-quality grade milk producing group (generic-quality farms) or high-quality grade milk producing group (high-quality farms). Each raw milk sample was subjected to bacterial count using the Bactometer system and somatic cell count. 1. For the raw milk samples collected from generic-quality farms during the period of Jan. - Dec. 1996, the total mean bacterial count of samples was 1.3×10⁵ cfu/ml and the total percentage of samples graded as the first grade in bacteriological quality (the first grade rate of samples) was 65.7%. However, from the samples during the period of Jan. - Dec. 1997, the total mean bacterial count and the first grade rate of samples were 0.8×10⁵ cfu/ml and 77.7%, respectively. The samples collected from high-quality farms in 1996 showed 1.8×10⁴ cfu/ml and 98.9%, respectively. Also, the samples of 1997 revealed 2.1×10⁴ cfu/ml and 98.8%, respectively. 2. For the raw milk samples collected from tank-lorries of generic-quality farms during the period of Jan. - Dec. 1996, the total mean bacterial count of samples was 3.4×10⁵ cfu/ml and the first grade rate of samples was 21.9%. However, from the samples during the period of Jan. - Dec. 1997, the total mean bacterial count and the first grade rate of samples were 2.4×10⁵ cfu/ml and 35.9%, respectively. The samples collected from tank-lorries of high-quality farms in 1996 showed 4.7×10⁴ cfu/ml and 91.5%, respectively. The samples of 1997 revealed 5.2×10⁴ cfu/ml and 89.0%, respectively. 3. The total mean somatic cell count (SCC) of raw milk samples from generic farms during the period of Jan. - Dec. 1996 was 511,000 cells/ml and the total percentage of samples classified as the first grade in somatical quality (the first grade rate of samples) was 18.8%. However, from the samples during the period of Jan. - Dec. 1997, the total mean SCC and the first grade rate of samples were 476,000 cells/ml and 21.1%, respectively. The samples of high-quality farms in 1996 showed 207,000 cells/ml and 58.6%, respectively. Also, the samples of 1997 revealed 178,000 cells/ml and 67.5%, respectively. 4. For the samples collected from tank-lorries of generic-quality farms during the period of Jan. - Dec. 1996, the total mean SCC of samples was 568,000 cells/ml and the first grade rate of samples was 1.4%. However, from the samples during the period of Jan. - Dec. 1997, the total mean SCC and the first grade rate of samples were 469,000 cells/ml and 1.9%, respectively. The samples collected from tank-lorries of high-quality farms in 1996 showed 212,000 cells/ml and 44.9%, respectively. The samples of 1997 revealed 178,000 cells/ml and 71.8%, respectively.
