조선시대 문헌에 나타난 후식류의 변화에 관한 고찰

Literature Review on the Changes of Joseon Dynasty Desserts

1600년대 이후부터 1900년대까지의 각 시대별 조리서들에 나타난 우리나라 전통 후식류의 형태와 그변천과정을 연구하였으며 그 결과는 다음과 같다. 떡류는 우리나라 명절식과 의례식의 대표음식으로 쓰여 지며 만드는 방법에 따라 찐 떡, 친 떡, 경단 및 지진 떡으로 나누어 분류할 수 있었다. 다식류는 원료로 곡류, 나무열매류, 화분류, 식물뿌리, 건어물류 및 채소류와 같은 재료들이 광범위하게 동원된 후식류였으며, 정과류와 과편류도 과실류를 비롯하여 식물의 뿌리, 줄기, 열매 등 재료들이 광범위하게 활용되었으며, 특히 앵두를 재료로 한 앵두전과 앵두편이 전 시기에 걸쳐 사용되고 있었다. 유과류는 만드는 모양과 입혀진 색깔에 따라 다양하게 지칭되며 변화되었으며, 유밀과는 약과가 으뜸 역할을 하며 현재에 이르고 있으며, 음청류는 화채류와 차류가 다양하게 발전되며 오늘에 이르고 있음을 알 수있었다.

Desserts of Joseon Dynasty era were reviewed based on traditional culinary books and related data. The aims of this study were to research the changes and progressive traces of Korean desserts as its respective periods. For these verification and classification of Korean desserts, we examined the methods and recipes of them. Old culinary books of Joseon Dynasty, Eumsikdimibang, Yorok, Jungbosarlimkyungze, Wonheangeulmijungrieugwe, Eumsikbangmun, Kyuhapchongseo, Choseonmussangsinsikyorijebyup and Choseonryorijebyup were reviewed. The kinds of Korean traditional desserts are rice cake, dasik, jungwa & gwapyun, yugwa, yumilgwa & suksilgwa and beverage. Rice cakes can be classified into four categories as like steamed, smashed, boiled and panfried. Steaming was the most frequently used method of rice cake recipes. In case of dasik, many kinds of food ingredients and pharmaceutical materials were included in the recipes: cereals, wood fruits, flower flours, plant roots and dried seafoods. Jungwa & gwapyun also used various materials: fruits as apricot and peach, roots as lotus, ginger and ginseng, sprouts as bamboo. Some kinds of yugwa, yumilgwa and suksilgwa are still consumed as desserts on Korean holidays, ancestral rites and banquets although many of them have disappeared nowadays. In addition, cold and warm beverages diversely appeared in Joseon Dynasty era.
