본 연구는 송광사에서 전해 내려오는 레시피와 문헌연구, 인터뷰를 통해 송광사 사찰음식을 발굴하였고, 스토리텔링을 개발하여 사찰음식의 관광 상품화를 연구하고 제안하였다. 그 결과 송광사의 사찰요리로 전남 해안지방에서 재배되는 식재료를 이용한 봄ㆍ여름ㆍ가을ㆍ겨울, 4계절 사찰음식 메뉴를 발굴하였으며, 송광사 사찰음식 이야기는 역사적 근거를 기반으로 송광사 사찰음식의 특징을 수집하여 ① ‘깨달음을 얻기 위한 행자의 검소하고 담백한 맛’과 ② ‘병을 낫게 하고, 건강한 약이 되는 송광사 사찰음식’ 의 두 가지 스토리텔링을 개발하였다.
The present research aims to provide a variety of recipes with practical guidance in cooking temple food and to propose the possibility of offering food-themed tour programs that include experiencing unique temple food. To achieve the goals of this project, Korean temple recipes that have been handed down over the centuries, literature research, interviews were reviewed. Based on these research findings, the temple food menu for four seasons using the ingredients grown in the coastal regions of South Jeolla Province was developed and incorporated into the Songgwangsa Temple’s cuisine. In addition to the temple menu, the key characteristics of temple food were chosen on the basis of existing historical materials and thus two stories were developed with the main themes like the following: 1) to treat temple visitors with bland and mild-tasting healthy food and 2) to help people cure diseases with temple food based on the philosophy “Food is medicine.”
