This study was carried out to develop a substitute tea using the extract of Phellinus linteus (PL) and Acanthopanax senticosus (AS). The antioxidant activity, free sugar and sensory properties of the extracts and substitute tea were investigated. The extraction yield of AS (5.93%) was higher than that of PL (5.28%). The total phenolic and flavonoid contents of PL were 6.84 g/100 g and 1.81 g/100 g, respectively. The oxygen radical absorbance capacity (ORAC) of PL (636.86 μM/g FW) was higher than that of AS (263.07 μM/g FW). The DPPH and ABTS+ radical scavenging activity and superoxide radical scavenging activity of the mixed extracts were 25.23-34.28% and 30.44-45.78%, respectively. Ferric reducing antioxidant power and the reducing power of mixed extracts were 96.58-208.35 μM. Antioxidant ability of the substitue tea was examined. The superoxide radical scavenging activity and ferric reducing antioxidant power showed high scavenging ability. The free sugar content was 4.45-8.25 g/100 mL. In particular, the fructose content was 2.25-4.25 g/100 mL. The sensory evaluation showed that the substitute tea of PL+AS 15% had the lowest level of taste and overall acceptability and there were no significant differences in color and flavor. In conclusion, the extracts of PL and AS have potential as substitute tea materials.
