급식속성이 급식만족을 매개로 직무만족에 미치는 영향에 대한 실증적 연구

An Empirical Study on Effecting the Meal Properties to the Job Satisfaction through the Meal Satisfaction

본 연구에서는 첫째, 산업체 단체급식을 대상으로 산업체 근로자들의 급식만족에 대한 급식의 속성인 요소들을 조사하여 급식만족에 어떠한 영향을 미치는지, 둘째, 급식만족이 직무만족에 어떠한 영향을 미치는지, 셋째, 급식만족이 급식소 운영형태에 따라 직무만족에 어떠한 영향을 미치는지를 규명하여 이러한 요소들이 산업체 단체급식 관리에서 개선이 필요한 사항을 제안하고자 한다. 단체급식의 급식속성 요소를 급식품질, 위생상태, 급식시설, 급식서비스 등의 요소로 나누었으며, 직무만족은 환경요인과 직무기여도로 나누어 측정하였다. 연구의 결과는 다음과 같다. 첫째, 급식 속성 중 급식품질과 급식서비스는 급식만족에 유의한 영향을 미치고 있는 것으로 나타났다. 둘째, 급식만족은 근무환경, 직무기여도에 유의한 영향을 미치고 있는 것으로 나타났다. 셋째, 운영형태를 조절변수로 하여 급식만족에 대한 직무만족의 추정 결과를 보면 급식만족은 직무만족의 요소인 직무기여도에는 유의한 영향을 미치고 있는 것으로 나타났다. 위와 같이 평가한 내용을 토대로 현재의 급식의 속성들을 진단하여 근로자의 급식에 대한 만족도를 높이고 기업의 직무만족을 높이는데 기초 자료로 제공하고자 한다.

These days, meal service industry are expanded due to increase desires and needs of worker s expectation for meal service. recipients who received high quality meal service by the enhancement of quality life in the development of the food industry and the food service industry are wanting to have food and service of better quality than to simply eat the food. The conclusion to this study is summarized as follows; first, meal quality, quality of food ingredients and freshness of the ingredients has significant effect on meal satisfaction. Meal service as kindness of the staffs at feeding facilities, speed and punctuality of rationing time has significant effect on meal satisfaction. Second, meal satisfactions are significant effect in working environment and job contribution. Third, meal satisfactions are significant effect in job contribution by operation way.
