고종시대는 외국의 차문화 유입이 급증하면서 우리 차문화의 틀을 바꾸기 시작한 시기이다. 본 연구는 고종시대 차문화의 특성과 변화과정을 왕실의 사신연과 진연 등 연향을 통해 고찰한다. 개방화가 시대적 과제였던 시대 고종은 서양과의 원만한 관계를 구축하기 위해 낯선 문화에 적극적으로 받아들이며 변화를 주도했다. 고종시대 왕실 연회는 작설차, 백호차, 담강차 등으로 예를 표하는 진다의식이 행해졌다. 개항이 되자 황실은 손탁, 엠마 크뢰벨 등 황실 요리사와 내한한 외국인 등에 의해 서양의 일상 음료인 홍차와 커피가 유입되었다. 왕실(황실)에서는 전통연회에서 작설차와 백호차가, 서양식과 절충된 황실연회에서 홍차, 커피가 음용되었고, 차에 따라 다식(茶食) 또한 전통식과 케이크, 비스킷, 와플 등 서양식 다식이 접빈식으로 나왔다. 고종시대 음식과 식습관, 예법과 의식 등 서구의 식문화와 예법이 빠르게 유입되며, 오래도록 유지되어온 조선 왕실의 식문화와 빈례의식을 점차 변화시켰다. 궁중에 서양 차문화를 유입·이식한 고종시대는 현대적 의미의 차문화를 탄생시킨 시기이다. 이 시대의 차문화는 우리의 미래 차문화를 예측할 수 있는 단초를 제공하고 있다. 먼저를 뜻하는 ‘전(前)’이 과거와 미래의 의미를 담고 있듯이 고종시대의 차문화 연구는 오래된 미래이다. 현재 우리에게 가장 가까운 과거인 고종시대 차문화 연구를 통해 약화된 전통 차문화를 회복되어야 한다.
During the King Gojong Era in the late 19th century, the inflows of foreign tea culture have had huge impacts on Korean tea culture. This paper investigates the changing characteristics of the tea culture in the King Gojong Era by examining the envoy banquet rites and court banquets. King Gojong accepted Western culture in order to open the world. At almost all the official banquets and rites, tea ceremonies have been performed and Western everyday beverage, black tea and coffee have been introduced to the royal family. In the traditional banquets and ceremonies, jakseol-cha(early-bud green tea), damgang-tea(淡薑茶) and bekho-tea(白毫茶) have been served as official beverage, on the other hand, black tea, coffee, and tea food such as cakes, biscuits and waffles have been served in the East-West hybrid banquets. The influx of Western culture and etiquette like food, rituals, and beverage gradually changed the long-standing eating culture and official ceremonies of Korean Empire. The King Gojong era can be remembered as the starting point of modern, fusion, and hybrid tea culture in Korean tea history, also this cultural process can be a clue for prospecting the future tea culture.
