『조선무쌍신식요리제법』에 기록된 차(茶) 고찰

A Study on Tea Recorded in 『Joseonmussangsinsigyolijebeob』 - Focusing on pure tea and mixed tea

본 논문은 1920･30년대 우리나라 차(茶) 연구의 관점에서 이용기(1870-1933?)가 저술한 『조선무쌍신식요리제법』「차 만드는 법」의 내용과 관련된 문헌의 출처를 탐색하고 조리법 및 음용법의 특징을 규명하는 데 목적을 두었다. 이를 위해 이 조리서의「차 만드는 법」과 관련된 출처를 조선 시대 문헌을 중심으로 탐색해 고찰하였다. 또한「차 만드는 법」가운데 순차(純茶)와 차혼성차(茶混成茶)에 해당되는 내용에 초점을 두고 조리법 및 음용법의 특징을 분석하였다. 주요 연구결과를 요약하면 다음과 같다. 첫째, 이 조리서에 기록된 차혼성차인 구기차･국화차･기국차･귤강차는 서유구(1764-1845)의 임원경제지』 정조지」와 같은 백과전서에서 동일한 내용을 찾아볼 수 있었다. 반면 순차인 보림차의 경우 관련 출처는 이유원(1814-1888)의 시문집인 가오고략』에서 확인할 수 있었다. 둘째, 「차 만드는 법」에서 저자는 순차와 차혼성차의 재료에 따른 조리와 음용 방법에 대한 정확한 지식과 경험을 중요하게 강조하였다.

The purpose of this thesis was to search for the sources of literature related to the contents of the 「How to Make Tea」 in the 『Joseonmussangsinsigyolijebeob(朝鮮無雙新式料理製法)』 by Lee Yong-gi (1870-1933?) from the perspective of Korean tea research in the 1920s and 30s. It also aimed to find out the characteristics of tea recipes and drinking methods recorded in 「How to Make Tea」. The main results are as follows. First, the mixed teas recorded in 「How to Make Tea」 were Gugicha(枸杞茶), Gughwacha(菊花茶), Gigugcha(杞菊茶) and Gyulgangcha(橘薑茶). The contents of these teas were found in the encyclopedia like 「Jeongjoji(鼎俎志)」 in 『Imwongyeongjeji(林園經濟志)』 by Seo Yu-gu (1764-1845). On the other hand, in the case of pure tea, Borimcha(普林茶), the relevant source was confirmed in Lee Yoo-won (1814-1888) s collection of poems, 『Gaogolyag(嘉梧藁略)』. Second, in 「How to Make Tea」, the author emphasized the exact knowledge and experience of making and drinking according to the ingredients of pure tea and mixed teas.
