Food Chain and Environment (Health) Problems: Focused on Michael Pollan’s The Omnivore’s Dilemma

인간이 생존을 위해 ‘무엇을 먹을까?’라는 가장 기본적인 질문에 음식 취향이 유전자에 내재되어 있는 초식동물 코알라와는 달리 잡식동물인 인간은 늘 고민에 빠진다. 바쁜 일상과 음식의 풍요 속에 사는 현대인들은 수만 가지의 가공음식과 패스트푸드, 식품산업광고에 무방비로 노출되어 음식문맹자로서 개인의 건강을 해칠 뿐 아니라 생태계와 환경을 파괴하는데 앞장서고 있다. 본 논문에서 필자는 오늘날 식문화에 숨어있는 자연, 환경(건강), 생태적 관계를 전체론적 입장에서 폴란이 추적한 세 가지 음식사슬 중 산업적 음식사슬과 전원적 음식사슬을 바탕으로 다음 두 가지 문제의식을 주제로 접근하여 설명하였다. 첫째, 산업적 음식사슬의 경로 속에 발생할 수 있는 환경오염문제와 GMO 식품의 환경(건강)문제이다. 둘째, 전원적 음식사슬에서 반(半)유기농 기업형 음식시스템의 문제점과 전(全)유기농 음식은 ‘음식정의(food justice)’ 차원에서 어떻게 그 대안을 찾을 수 있는가이다. 음식이 먹는 사람과 몸에서 출발하여 세계와 연관을 맺고 있다는 유기론적 생태주의 관점에서 접근한 본 논문은 폴란이 근본적으로 먹는 행위의 생태학과 윤리학을 얘기한 ??잡식동물의 딜레마??로부터 필자는 ‘음식정의’의 개념을 접목하여 우리사회의 미래세대를 위한 건강한 음식사슬의 대안은 무엇이어야 하는가를 도시농업(학교 텃밭)에서 찾아야한다고 주장하였다.

The basic question, “what does a human being eat for living?”, always makes omnivore people in trouble, as opposed to a herbivorous animal, koala that the food taste is inherent in a gene. Modern people in a hectic daily life and abundant food are vulnerable to process food, fast food, the commercial of food industry, so that as food illiterates they are in danger of health and are taking the initiative in destroying ecosystem and environment. This thesis has approached nature, environment(health), the ecosystem relation lurking in today’s culinary tradition based on the industrial food chain and rural one among three food chains which Michael Pollan had tracked from a holistic point of view and explained following two research matters. First, the thing is environmental pollution which can occur in the course of industrial food chain and GMO(Genetrically Modified Organism) food. Second, how can the alternative from the food justice point of view and the problems of semi-organic industrial food system and full organic food in the rural food chain find the alternative? This thesis has researched in terms of organic ecologism that food comes from human beings and their body and is related with the world, and has claimed that combining the concept ‘food justice’ from Pollan’s ｢The Omnivorae’s Dilemma｣ fundamentally stating the ecology and ethics of eating into it, urban agriculture(a field attached to a school) should be the resolution of the question - what should be an alternative to healthy food chain for the future generation of society?
