Tang and Song dynasties are very important period that tea drink culture is widely accepted in China. ByungCha(Tang) and DanCha(Song) both are cake te, but they are very different in making the teas. DanCha is far more luxurious tea comparing to the ByungCha. So DanCha needs much younger leaves, and sometimes it used the needle like thread within the young leaves. So tea leaves picking time is far more earlier in case of DanCha, and also to pick the leaves it uses the finger nail to cut the leaves quickly. However, both are very intricate in picking time. They pick the leaves early in the morning before sun light, but in rainy day or even in cloudy day they did not pick the leaves to worry about too much moisture may degrade the quality of tea.
