제주 중화요리점의 형성과 변천

Formation and Transformation of Jeju Chinese Restaurants

본 연구는 제주 중화요리점의 형성과 변천에 주목하였다. 새로운 시선으로 제주 화교에 대한 연구 영역 확장을 시도하였으며, 이를 통하여 제주 사회의 발전에 기여한 화교의 역할을 찾아내는 계기를 마련하였다. 본 연구의 주요 내용은 다음과 같다. 첫째, 제주 중화요리점의 변천을 유입기, 정착기, 변화기로 구분하여 살펴보았다. 둘째, 제주 중화요리점의 변천에 영향을 미친 요인으로 해방 이후 역사적 상황과의 연관성을 살펴보았다. 셋째, 위의 연구 과정에서 제주 화교 유입 시기에 대한 선행 연구의 오류를 밝힐 수 있었다. 제주 중화요리점의 정착을 이끌어 왔던 화교 중화요리점 현황을 보면 규모가 갖는 한계를 확인하게 된다. 제주의 구화교(舊華僑)가 운영하는 중화요리점은 중⋅소형 규모가 대부분이며, 부부와 자녀로 구성된 가족 운영 방식이다. 이러한 규모로는 자체적으로 음식 브랜드를 만들거나 문화 이미지를 구축하기 어렵다. 본 연구는 이러한 한계를 극복할 수 있는 방안으로 중국 현지와의 직접적인 교류의 중요성을 제기하고자 한다. 중국 각 지역의 특산 음식과 조미료에 대한 연구 개발 및 활용을 통한 요리법 개발이 필요하며, 이를 위하여 요리사와 운영자에 대한 맞춤형 교육을 실시하는 등의 대안이 절실하다. 이러한 다각적인 모색을 통하여 제주 중화요리업 전반이 더욱 발전하기를 기대한다.

The study focused on the formation and transformation of Jeju Chinese Restaurants. With a new perspective, attempted to expand the research area on Jeju overseas Chinese and provied an opportunity to find the role of overseas Chinese who contributed to the development of Jeju society. The main contents of this study are as follows. First, the change in Jeju Chinese restaurants were examined by dividing them into the introductory period, the settlement period, and the changing period. Second, the relationship with the historical situation after liberation was examined as a factor that influenced the change of Jeju Chinese restaurants. Third, during the above research process, it was possible to reveal the errors of previous studies on the timing of the influx of overseas Chinses to Jeju.
