쌀은 베트남에서 가장 중요한 작물이다. 2017년 베트남은 2,740만 미터톤의 쌀을 생산하여 5번째 쌀 생산 국가가 되었다. 같은 해 베트남은 580만 톤으로 쌀 수출 3위 국가가 됐다. 다양한 쌀 기반 식품이 생산되었으며, 쌀술은 베트남 사람들의 문화 및 정신생활에 중요한 역할을 하고 있다. 베트남의 쌀술은 증류주와 비증류 제품의 두 그룹으로 나눌 수 있다. 증류주는 산업적인 규모와 자가소비를 목적으로 생산되는 루오우 드 (ruou de), 루오우네프 (ruounep), 보드카로 구성된다. 루오우 칸(ruou can), 쌀술 등 비증류한 발효주는 자가소비 규모로 생산되고 있다. 이 논문에서는 베트남 주류의 생산 방법을 간략하게 설명한 후, 제품 수율 및 품질향상을 위한 쌀술에 관한 최근 연구를 소개하고자 한다.
Rice is the most important crops in Vietnam. In 2017, Vietnam is the fifth country in rice production with 27.4 million metric tons of milled rice. In the same year, Vietnam is the third country in rice exportation with 5.8 million metric tons. Different rice based foods have been produced and alcoholic rice beverage plays a significant role in cultural and spiritual life of Vietnamese people. In Vietnam, alcoholic rice beverage can be divided in two groups: distilled and non-distilled products. Distilled products consist of ruou de, ruou nep, vodka, liquor which have been produced at both industrial and home scale. Non-distilled products including ruou can and wine rice have been only produced at home scale. The production methods are briefly described and discussed. Current research on alcoholic rice beverage is introduced for improvement in product yield and quality.
