This paper explores the design, implementation, and outcomes of a blended teaching model for the “Food Chemistry” course based on the Outcome-Based Education (OBE) concept. Through a systematic explanation of course objectives, content, implementation processes, and assessment methods, the study analyzes the advantages of blended teaching in promoting the achievement of student learning outcomes. The blended teaching model effectively enhances students' knowledge internalization, self-directed learning, and critical thinking skills, though there is still a need to strengthen writing skills. Future teaching reforms will continue to deepen, incorporating ideological and political elements into the curriculum to comprehensively improve students' overall competence, thereby contributing to innovative development in the food science and technology field. This research provides valuable insights for the application of blended teaching models in food chemistry education and offers a practical example for teaching reforms in the context of engineering education accreditation.
本文基于成果导向教育(OBE)理念,对“食品化学”混合式教学模式的设计、实施及效果进行了深入探讨。通过对课程目标、内容、实施过程及考核方式的系统阐述,分析了混合式教学在促进学生学习成果实现方面的优势。混合式教学模式有效提升了学生的知识内化、自主学习、批判性思维等关键能力,但写作能力培养仍需加强,未来教学改革将继续深化,融入课程思政元素,全面提高学生综合素养,为食品科技领域的创新发展贡献力量。本研究为混合式教学模式在食品化学教学中的应用提供了有益借鉴,也为工程教育认证背景下的教学改革提供了实践案例。
