외식업 주방의 물리적 환경이 주방 직원의 직무만족 및 업무몰입에 미치는 영향

A study on the effect of the physical environment of restaurant kitchen on the job satisfaction and work engagement of kitchen staff

본 연구의 목적은 외식업 주방의 물리적 환경이 주방 직원의 직무만족 및 업무몰입에 어떠한 영향을 미치는지를 분석하고, 또 직무만족과 업무몰입 간에는 서로 어떠한 상관관계가 있는지를 알아보고자 함에 있다. 가설검증 결과, 첫째, 주방의 물리적 환경요인에서 안전성, 쾌적성, 공간성 요인은 직무만족에 모두 유의한 영향을 미치는 것으로 나타났으며, 주방 환경이 안전하고 쾌적하고 편리하게 구성될 때 주방 직원의 직무만족은 높아짐을 알 수 있었다. 둘째. 주방의 물리적 환경과 업무몰입 간의 관계에서는 안전성, 공간성 요인만이 영향을 미치는 것으로 나타났으며, 주방 직원의 조리작업 시 안전성과 공간성의 확보는 직원의 업무몰입도를 높일 수 있는 반면에 쾌적성은 상대적으로 업무몰입에 큰 영향을 미치지 않음을 알 수 있었다. 셋째, 주방 직원의 직무만족은 업무몰입에 유의한 영향을 미치는 것으로 분석되었다. 즉, 주방 직원들이 주방 환경에 대해 가지는 긍정적인 인식은 직무만족을 유인·강화시켜 업무몰입에 긍정적인 영향을 미치게 되는 선행변수임을 알 수 있다. 따라서 본 연구는 주방 직원의 직무만족과 업무몰입을 높이기 위해 외식업 주방의 물리적 환경에 대한 지속적인 관심 및 관리가 필요하다는 실무적 시사점을 제시한다.

This study aims to investigate how the physical environment of restaurant kitchens affects job satisfaction and work engagement among kitchen staff, and to examine the relationship between job satisfaction and work engagement. The results of hypothesis testing revealed the following: First, safety, comfort, and spatial factors all had a significant impact on job satisfaction. Thus,, it was confirmed that job satisfaction among kitchen staff increased when the kitchen environment was safe, comfortable, and convenient. Second, only safety and spatial factors had a positive effect on work engagement in relationship between the physical environment of kitchens and work engagement. Therefore, securing safety and adequate space during cooking tasks can enhance work engagement, while comfort did not have a significant effect on work engagement. Third, it was found that job satisfaction positively influenced work engagement among kitchen staff. In other words, a positive perception of the kitchen environment enhances job satisfaction and serves as an antecedent variable that positively affects work engagement. This study suggests that continuous attention to and management of the physical environment in restaurant kitchens are necessary to improve job satisfaction and work engagement among kitchen staff.
