An In-depth Look At and Case Study of Coffee Omakase

This study aims to propose a direction for discussion to ensure the continued growth of coffee omakase through an in-depth examination of this concept. To achieve this objective, the study extensively reviewed literature related to coffee omakase, previous research, and relevant case studies. This approach was taken with the understanding that cafes may disappear or fail when they reach the limits of growth and are unable to sustain themselves. Particularly, the necessity of this study was highlighted due to the need to discuss the possibility of sustainable growth, focusing on coffee omakase cafes that have recently been emerging in various regions. Given the lack of sufficient research on this topic and the need to suggest new directions in a situation where coffee omakase cafes are opening one after another, this study is timely. To this end, the following discussion directions were suggested based on the in-depth examination of coffee omakase conducted in this study: First, intensive research and development of coffee pairings that enhance mood changes are necessary. Second, the expansion of content related to coffee pairings and the planning of differentiated coffee courses were recommended. Third, strengthening communication capabilities with coffee consumers and providing experiences that anticipate consumer trends were emphasized as important. Fourth, personalized promotions and the development of coffee omakase offerings tailored to the tastes and preferences of segmented customer groups were suggested.
