Against the background of the quality power strategy and the accelerated transformation and upgrading of the food industry, higher vocational food majors, as the core carrier for cultivating front-line technical and skilled talents in the industry, urgently need to break through the traditional dilemma of “emphasizing skill training over quality cultivation.” Combining the survey data of food enterprises, this paper clearly identifies craftsman quality, quality quality, compliance quality, digital quality and innovation quality as the core qualities, extracts seven quality traits including quality first, safety compliance, diligence and focus, scientific and technological innovation, digital improvement, pursuit of excellence and international vision, and constructs a “one standard and three dimensions” excellent craftsman professional quality training system guided by “five cores and seven items”. Through the three-dimensional collaborative education structure of curriculum, practice and life, and supporting the implementation mode of “goal guidance-process infiltration-three ring interaction” and multi-dimensional guarantee mechanism, it provides systematic theoretical support and practical schemes for higher vocational food majors to cultivate “morality and skills” excellent craftsmen, and helps the high-quality development of the food industry.
在质量强国战略与食品行业加速转型升级的背景下,高职食品类专业作为行业一线技术技能人才培养的核心载体,亟需突破“重技能训练、轻素养培育”的传统困境。本文结合食品企业调研数据,明确将工匠素养、质量素养、合规素养、数字素养、创新素养确立为核心素养,提炼质量至上、安全合规、勤奋专注、科技创新、数字提升、追求卓越、国际视野七项素养特质,构建“五核七项”导向的“一标三维”卓越工匠职业素养培养体系。通过课程、实践、生活三维协同的育人架构,配套“目标引领-过程浸润-三环互应”实施模式与多维度保障机制,为高职食品类专业培育“德技并修”的卓越工匠提供系统化理论支撑与可落地实践方案,助力食品行业高质量发展。
