AI赋能食品专业数智化课程体系构建与人才培养模式创新研究

Research on the Construction of Digitalized Curriculum System for Food Specialties and the Innovation of Talent Training Model Enabled by AI

The rapid development of artificial intelligence (AI) technology is reshaping the production methods and talent demands in the food industry. The traditional food professional curriculum system is facing real-world challenges such as lagging knowledge update, insufficient cross-disciplinary ability cultivation, and disconnection between practical teaching and the industry. To adapt to the digital and intelligent transformation of the food industry and the requirements of new engineering disciplines, and to solve problems such as insufficient integration of traditional curriculum systems with AI technology and the mismatch between talent cultivation and industry demands, this thesis takes AI empowerment as the starting point, conducts research on the reconstruction of the food professional digital and intelligent curriculum system and the innovation of the talent cultivation model, and explores the path of cultivating high-quality applied talents with food-related expertise suitable for the new era. Based on policy analysis and typical practical cases such as the Jiangnan University Food AI Excellence Innovation Class and Jiangsu Food and Drug Technology College, this thesis discusses the paths of AI empowerment for the reconstruction of the food professional digital and intelligent curriculum system and the innovation of the talent cultivation model. The research proposes reform strategies such as constructing a four-layer progressive curriculum system of “general knowledge layer - cross-disciplinary layer-application layer - innovation layer”, creating an intelligent experimental teaching platform that combines virtual and real worlds, promoting project-based learning and blended teaching reforms, and establishing a diversified and collaborative teaching effectiveness evaluation mechanism. Teaching practice shows that the AI empowerment educational reform helps cultivate high-quality interdisciplinary composite food talents with AI cross-thinking, and has reference value for promoting the high-quality development of food professional education.

人工智能(artificial intelligence, AI)技术的快速发展正在影响食品行业的生产方式与人才需求,传统食品专业课程体系存在知识更新滞后、跨学科能力培养不足、实践教学与产业脱节等现实问题。为适应食品产业数智化转型与新工科建设需求,解决传统课程体系与人工智能技术融合不足、人才培养与行业需求脱节等难题,本文以AI赋能为切入点,探究食品专业数智化课程体系构建与人才培养模式创新,探索与新时代需求相匹配的食品类高素质应用型人才培养路径。本文基于政策分析与江南大学食品AI卓越创新班、江苏食品药品职业技术学院等典型实践案例,探讨了AI赋能食品专业数智化课程体系构建与人才培养模式创新的路径。研究提出构建“通识层——交叉层——应用层——创新层”四层递进式课程体系,打造虚实结合的智能实验教学平台,推进项目式学习与混合式教学改革,建立多元协同的教学效果评价机制等改革策略。AI赋能的教育改革有助于培养具备交叉思维和能力的高素质复合型食品人才,对推动食品专业教育高质量发展具有参考价值。
