Effects of dietary soyprotein on plasma cholesterol metabolism in rats

The plasma cholesterol-lowering effects of dietary soyprotein was examined in rats. The inclusion of soyprotein in a diet containing cholesterol and casein brought about a reduction in the plasma cholesterol levels. A further cholesterol effect was achieved by increasing the proportion of soyprotein in the diet. Conversely, the incorporation of increasing the proportions of casein or casein only in the diet resulted in an elevation of the plasma cholesterol level. The plasma HDL cholesterol level were predominatly reflected in higher proportion of soyprotein in the diet. The concentration of liver cholesterol paralleled the concentration of cholesterol in the plasma. Thus, this study clearly demonstrates that dietary soyprotein is able to reduce the level of cholesterol in plasma and liver.
