거품 중의 공기 함량에 관한 연구

Studies on air content of whipped foams

Air content of whipped foams could be related with mean bubble size and viscosity of whipped material. It also could be expressed as a function of physical properties of solutions and operating conditions. So air content of whipped foams was approximated by the product of three dimensionless numbers, Weber, Reynolds and Froude numbers using the domension analysis. Among the three dimensionless numbers, Reynolds number showed the largest correlation factor to the air content of whipped foams.
