Most of companies processing the sea food have produced only copy food in the new product development. But, according to the changing of consumer environment, a systematic scheme to develop new products through consumer research, etc. is highly recommended and indispensable. In this study, one of the cpmpanies producing processed cuttlefish was selected to examine its new product development process through theoretical verification. From the result of the theoretical verification, some theoretical defects, such as the obscurity of target market, limitation in consumer test, and omission of business analysis and market thesting stage were found out. The author tried to grope for a better new product development process of processed sea food in this study, considering effective performance of the new product development process as the best resource in business competition.
