A Study of Minimalism-based Flavor Sensory Lexicon for Wellness: Focusing on the Creative Semantic Interpretation and Expression of Flavor Perception

본 연구는 현대 커피인 스페셜티 커피가 지닌 향미 속성의 진정한 가치를 새롭게 제시할 수 있도록 향미의 잠재력을 극대화하는 방식 대신 사물에 새로운 가치를 자유롭게 부여하는 인간의 본성에 주목하였다. 스페셜티 커피는 향미 지각과정에서 다양한 감정을 불러일으킬 수 있으며, 이는 인간의 언어능력에 기인한다. 웰니스는 인간 잠재력의 최대화를 목표로 하며, 이를 위하여 연구 과정에서는 플레이버 센서리 렉시콘의 ‘description’을 각 카테고리와 체계적으로 연결함으로써 미니멀리즘의 어휘 항목으로 내재화하였다. 커피 향미가 지닌 의미는 지각을 통해 느끼는 구체적인 감정, 컬러 등과 더욱 폭넓게 연결되면서 인간이 지닌 고유한 창조성을 발휘하도록 만들 수 있다. 스페셜티 커피의 진정한 가치는 상품이 아닌 인간 내면에 존재하며, 커피의 모습은 향미 지각을 통한 쾌락 추구를 넘어 인간의 언어능력을 통해 계속 새롭게 표현될 것이다.

This study focuses on the human nature of freely giving new values to things instead of maximizing the potential of flavor so that the true value of the flavor properties of modern coffee, specialty coffee, can be newly presented. Specialty coffee can arouse various emotions in the process of flavor perception, which is due to human language ability. Wellness aims to maximize human potential, and for this purpose, ‘description’ of the Flavor Sensory Lexicon was internalized as a vocabulary item of minimalism by systematically connecting it with each category in the research process. The meaning of the coffee flavor can show the unique creativity of human beings by being more broadly connected to the specific emotions and colors felt through perception. The true value of specialty coffee exists within the human being, not as a commodity. The nature of coffee will continue to appear through human language ability beyond the pursuit of pleasure through flavor perception.
