Microstructure of Fat Free Plain Set-type Yogurt Containing Folic Acid

The objective of this study was to investigate the microstructure of folic acid-contained yogurt. Folic acids (25 and 50%) were added to milk preparation prior to pasteurization, then starter culture was added.
